I so hope someone can help resolve this as I'm sure I'm not the only one with this issue. :/

We've recently launched a newsletter using MailChimp and activated the tracking option (tracks who click on which link in your newsletter).

I inserted this link in our newsletter : www.lanquest-hosting.net/index.php?optio...k=category&id=34

Which does SEF to this link : www.lanquest-hosting.net/domain-name-pro...main-name-promotions

Due to the tracking being activated. MailChimp's initial link differs as inserts a user ID of some sort within the link to reflect the different recipients.

1. MailChimp Email Link:
lanquest-hosting.us3.list-manage1.com/tr...056&e=c8eb66a975

2. MailChimp forwards/re-directs to this link to Joomla/JoomSEF then takes over.

Should be redirected to : the original link provided in the initial email.

My question is: How the heck can I achieve this?
Perhaps with using some sort of wildcard setting?

What exactly would you like to achieve? If you want to remove the utm_source, utm_campaign, utm_medium and utm_term variables from the redirected URL, I'm afraid that this is handled by MailChimp itself, so JoomSEF probably won't help you with that.
