Try to figure this out:

Old Non-SEF Url: index.php?option=com_sobi2&catid=2&Itemid=56

New SEF URL: test/test/test
Save as Custom Redirect: checked
Aktiv : checked
SEF: checked
Locked: checked

But nothing happens/changes

the website still gives me the automatuc Sef-Url: outdoor-sport/bergsport/canyoning.html

????

Have you cleared the caches in Joomla and JoomSEF?
What does the Real URL for outdoor-sport/bergsport/canyoning.html look like?
