The component did not recognize the language and all invoices are printed in English

1) you need to have the language files translated into French. (/langauge/com_vminvoice/...) Then in can print invoices in French.
We do not have such translation available yet, so you need to translate it your self. But the fronend file is not long. We will appreciate if you post the translation to

2) yes, the "signature" in the bottom can be turned off in configuration settings
