I have enable the fonction "Add category to page title" in "Manage Extensions > Content > Meta Tags" and it's working fine but I'd like to change the separator (pipe |, instead of dash -).

E.g : Article title - Category title | Site name >>> Article title | Category title | Site name

I know I'll have to make a change in the code and that doesn't scare me... I just need to know WHERE I have to do it.

Hello, the separator can be configured in JoomSEF plugin (system plugin). You will find there the item called title separator where you can change this.
