I have the JoomSEF Eventslist extension installed and when I try to change the config to remove the category name or anything like that, the settings are completely ignored.

Even after cleaning all the cache and even changing the name of the link it still shows the old link name 'King Ink Events' and the category name, doubling up the same name in the SEF URL.

No worries, I finally got it working, I forgot about deleting the old SEF urls before changing the settings

I didn't understand your solution, can you explained better...

Before the new amended urls could take effect I had to remove the old ones that were being used. I think part of the problem was that I had duplicate links as well, it's working fine now.

Now all I need is the same for Document Seller. I may give it a go myself but if you have one available I'd appreciate it :)
