1) the signature can be turned off in the component configuration (it is called generate signature)
you do not need to pay anything extra for that

2) as regards the field names, of course they can be renamed (you can use the language fike for that - it uses stadadard Joomla's API, so the files are located in language/com_xxx/...)
as regards this, if you would like us to patch the language file for you, you can buy another hour of paid support + send us information about what fields should be renamed to which ones
