This is not bug of Lady Gaga, but problem of older PHP version. Class DateInterval was implemented in PHP 5.3.0, so you need this or newer version of php on you server.

1. You have more possible ways to do it. There should be 3 types of plugins: default, flash and advanced.
default is basic plugin for object and allow you to set your simple halls. It is not so pretty plugin.
flash use swf file to show all seats. Flash plugin is a little more complicated and if you need to modify it, you have to be advanced user to understand its functionality. Also it allows you to create new flash plugin with completely new swf file. So eventually you can create what you need.
advanced is simple plugin, but it allows to customers set more things and finally it is nicer than defult plugin. It is using only javascript and html + css.

2. Payment methods on eTickets system are created with Joomla plugin system. If you need to create new payment gateway, it is possible. You just need to create new plugin of this type vmeticketpaymentmethod. You can use paypal plugin as an example.
